Carrot Fries

Kids (and grownups) will have no problem eating their veggies when you make these delicious carrot fries. They taste a lot like yam fries, and are perfect for dipping. So easy to make you can even let the older kids prepare, and a bag of organic baby carrots are easy to find and keep on hand for healthy snack emergencies. With only 3 ingredients, it doesn't get much easier than this!

CARROT FRIES RECIPE

one bag of organic baby carrots cut lengthwise,
or slice regular carrots about a centimeter thick.

toss with 1 -2 tsp olive oil.

sprinkle with salt (1/2 tsp or to taste)

Spread on parchment-lined baking sheet.

Warm oven and then bake (flipping once) at 400 degrees for 20 to 25 minutes - or until a little browning occurs. 

Optional:

add a little dried parsley for flavour, or toss in a little rice flour for extra crispiness.

Serve warm.

GARLIC DIP


1 package silken tofu (soft)
1 clove garlic (or 1/2 tsp of garlic / onion salt)
1 TBSP lemon juice
a pinch of mustard powder
1 tbsp vegetable oil
salt to taste

optional
1/4 tsp of guar gum for thickener
pepper: black, chipotle, paprika, roasted red or cayenne

blend until smooth
